Dark Fudge
1 1/2 cups granulated sugar
2/3 cup Evaporated Milk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups Dark Chocolate Chips
1/2 cup chopped pecans or walnuts or cashews (optional)
1 teaspoon vanilla extract
Line 8-inch-square baking pan with heavy duty foil.
Combine sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
Stir in marshmallows, chocolate chips, nuts and vanilla extract. Stir quickly for 1 minute or until marshmallows are melted. Pour into lined baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into squares.

Peanut Butter and Chocolate Truffles
1 c peanut butter chips
3/4 c butter
1/2 cup cocoa
1 can (14 oz) sweetened condensed milk
1 tablespoon vanilla
Coatings:
crushed graham cracker crumbs, confectioner’s sugar or crushed nuts.
In a heavy saucepan, over low heat, melt chips with butter. Stir in cocoa until smooth. Add condensed milk and vanilla. Cook and stir until thickened and well blended, about 4 minutes. Remove from heat. Chill until firm enough to handle. Shape into 1 inch balls. Roll in desired coating. Chill until firm.Store, covered in refrigerator. Makes about 3 dozen truffles
